Grano Padano should always be bought in wedges freshly cut from the wheel. They will be slightly moist and crumbly. Use any of the special little knives available to chip off elegant chunks when serving.

The Crust

The exterior is branded with a diamond shape trademark and the words "Grana Padano." After the aging process, each wheel is tested by officials who, armed with a small hammer, verify that when tapped, the correct sound is made, signifying the product quality. The crust is oiled during aging and is usually between '/6-'/3 in (4-8 mm) thick. It varies in color from goldenyellow to brown.
